Woodman's opens with Scrima's Pizza

The finishing touches are being applied at the Woodman's Food Market.

One week before the opening, the shelves are full, the exterior paint is being finalized, workers are being trained and managers are making sure everything is in line for Wednesday's opening.

The facility, 1600 E. Main St. on the city's northeast side, will also have a gas station and car wash that is currently under construction with seven additional lots for one- to two-acre developments.

It will also be home to Scrima's Pizza, which will reside inside Woodman's.

The original Scrima's Pizza was a staple for about 40 years on the east side of Waukesha before closing in the late 1990s.

Louis Scrima founded the original Scrima's Pizza in 1958 at 1028 N. Hartwell Ave. on the east side of Waukesha.

His sons Nick and Jim Scrima joined him at his pizza shop as did Dave Jarvis, Louis' son-in-law, and became partners.

The family was there for 35 years.

Joe Scrima, a distant cousin of Louis, opened his pizza shop, also called Scrima's Pizza (with his own recipe), in June 2012 on the city's northwest side inside Dave's Mobil Mart, 1808 Silvernail Road.

A year later, Joe Scrima — and his customers — are ready for an expansion.

"I was talking to people and everyone on the east side wanted (Scrima's Pizza) to come back," he said, relating to customers familiar with the original shop.

Joe looked at locations and realized Woodman's would be a nice fit.

"My original intent was to make pizzas for them and to put them on their shelves," Joe said. "So I took up samples to the (Woodman's staff) and they're like, 'yeah this is pretty good pizza.'"

Joe said the pizzas will be take-and-bake with the ability to do some baking due to limited ovens.

"They can order a pizza while shopping and we could cook it right there and get it ready for them," said Scrima, who explained this is the first time Woodman's has added a food shop inside one of its stores. "It will be handy for people coming through the store."

Joe praised his all-natural product saying "the sausage is all made fresh and dough is made fresh every day." Gluten-free pizza, calzones and garlic and cheesy bread will also be available.

"We're really going with the all-natural pizza and healthy aspect," Joe said. "You can't take the calories out, but at least it's healthy. That's been our forte."

Woodman's is a family-operated business. Joe did not work at the original Scrima's Pizza and was not affiliated with it, but said he always wanted to get in the restaurant business.

He said some of his family members are now working with him, just like Louis' family did with him.

And Joe said people haven't been disappointed with his version of Scrima's Pizza.

"I'm really proud and happy with the product and now younger kids are seeing what a good pizza tastes like," Joe said.
