Opened in May and dedicated to providing a unique experience, The Crest Pub & Grill in Downtown Waukesha showcases its owner's deep experience in Irish fare and desire to establish roots in a new community.
Building on experience
Owner Bruce Russell developed his restaurant chops in various environments, but is most comfortable with casual, lively venues. After establishing two Menomonee Falls-based restaurants, A.J. O'Brady's Irish Pub & Grill and The Mill, he looked at several other locations before deciding that Waukesha was the perfect next step.
'We looked at various locations over a two-year period,' Russell said of the former restaurant space. 'We kept coming back to this one. We liked what was going on in the city.'
Appealing to various tastes
The Crest features distinct dining options including a multi-television room for the sports minded, a bar designed also to be a lively environment, a quieter couples or family-oriented space and a place for a singular larger group to convene at a long table.
'The different areas offer something for everyone,' Russell said.
The menu reflects that same sentiment. Daily specials like Tuesday's $2 burgers are built around quality meals that are a loss leader, Russell said. Appetizers range from Irish nachos to Jalapeño poppers and beer and bacon cheese curds. Entrées include baked Reuben pie, lamb stew, salmon, ribs and a full array of burgers and sandwiches — all ranging from classic pub to Irish-infused fare.
Adding to the Irish theme, a full service bar includes specialties of the house like a popular blend of 2 Gingers Irish whiskey and ginger ale.
Reflecting community
In late June, Russell was looking forward to the end of the extensive downtown street construction. The newly opened street, he said, would not only ease access to his establishment but also allow The Crest to offer regular music outside its doors. Bands of all musical genres currently perform in the restaurant.
It all adds up to a place where people can be comfortable, Russell said.
'A true Irish pub is a community gathering place,' Russell said. 'We are here to support our community.'
