The Roots Coffeebar & Cafe opens in downtown Waukesha

Coffee lovers now have another location to congregate to in downtown Waukesha.

About a month after purchasing its new location, owners Hilary DeVreis and Heidi Laatsch have opened the Roots Coffeebar & Café in downtown.

The coffee shop opened on Oct. 28 in the space previously occupied by Sprizzo Gallery and Café at 363 W. Main St.

It is the second location for sisters DeVreis and Laatsch, who have operated Roots in downtown Oconomowoc for about four years.

Sprizzo Gallery & Café closed this spring after 17 years in downtown Waukesha.

DeVreis and Laatsch bought the Waukesha location in September and spent the last month remodeling the café's interior, including knocking down a back wall to create a lounge space in an area that was previously just used for storage at Sprizzo.

The Waukesha café will have the same hours of operation as in Oconomowoc — from 6 a.m. to 9 p.m. Monday through Thursday, 6 a.m. to 10 p.m. Friday, 6:30 a.m. to 10:30 p.m. Saturday and 6:30 a.m. to 7 p.m. Sunday.

The Roots' menu includes breakfast options, baked goods, small plates, salads, soups, hot sandwiches, gourmet sandwiches and pizza.

Gluten-free and organic options are also offered, and the business has a catering menu. A variety of hot and iced beverages are served.

The opening of Roots continues a transformation of new or revamped coffee shops in and around downtown.

A few months ago, Jason and Cristina Tofte bought The Steaming Cup in downtown from longtime owners Kerry and Terry Mackay and have added new menu items and also put their own touch on the place by altering the look of the coffee shop's interior.

Just outside of the center of downtown at 928 N. Hartwell Ave., Diana Markus recently opened Mama D's Coffee at the location of the former small Spoon counter-service restaurant. Markus also operates Mama D's Coffee in Wales.
